Mannanase is a class of enzymes capable of hydrolyzing mannans. Mannan is a type of saccharide. When mannanase acts on mannan molecules, it hydrolyzes them into the monosaccharide mannose and oligosaccharides such as manno‑oligosaccharides. These hydrolysates feature high solubility, which helps improve the taste and processability of food products. By recognizing and cleaving β‑1,4‑glycosidic linkages within the mannan backbone, this enzyme breaks long‑chain polysaccharides down into manno‑oligosaccharides (e.g., mannobiose, mannotriose) or monosaccharides. Some β‑mannanases can work synergistically with other enzymes (e.g., cellulase, xylanase) to degrade plant cell walls and boost substrate‑degradation efficiency.
Application Fields
1. Feed industry: Addition of β‑mannanase degrades antinutritional factors in grains (e.g., galactomannans in legumes), improves animal feed digestibility, and reduces accumulation of viscous substances in the intestine.
2. Food processing: Applied in the production of coffee, fruit juice and other products to reduce viscosity and modify texture; it is also used for the preparation of functional oligosaccharides (prebiotics) to support intestinal health.
3. Bioenergy: As one of the key enzymes for lignocellulose pretreatment, it facilitates the release of cellulose components and improves ethanol conversion efficiency.
4. Paper‑making and textile industries: It assists in degrading gums contained in plant fibers, lowers the dosage of chemical bleaching agents, and supports eco‑friendly production processes.
