概要
1つは酵素活性部位とトリプトファン残基に関係するもので、もう1つは8-アニリノナフタレン-1-スルホン酸結合に関係するものである。
トリプシンアガロースは不溶性の酵素製品である。従来の "可溶性 "酵素（トリプシン）を不活性塩基（アガロース）と反応させることにより製造される。この不溶性結合体は元の酵素の活性を保持している。アガロースに結合したトリプシンは非常に安定で、可溶性トリプシンよりも長時間変性条件を維持する。
応用例非常に活性が高く安定なトリプシンアガロース誘導体は、モデルジペプチドであるベンゾイルアルギニンロイシンアミドの合成設計の最適化に使用された。 トリプシンはまた、高分解能X線結晶構造解析を用いたタンパク質のプロトン化状態の決定に関する研究にも使用されている。
トリプシンアガロースは、プロラミン とグリアジン の酵素的加水分解に使用され、ペプチドを生成した。
