Panoramica
Glucoamylase (EC 3.2.1.3), also known as γ-amylase, is an exo-acting glycosidase that hydrolyzes α-1,4 and α-1,6 glycosidic bonds from the non-reducing ends of starch, completely converting starch into glucose. Therefore, it is widely used in industries such as alcohol, distilled spirits, antibiotics, amino acids, organic acids, glycerol, and starch sugar, making it one of the important industrial enzyme preparations in China.
Determination Principle: Glucoamylase hydrolyzes soluble starch to produce glucose, which reacts with 3,5-dinitrosalicylic acid to form a reddish-brown compound with maximum absorbance at 540 nm. Within a certain range, the color intensity of the reaction solution is proportional to the glucose concentration, allowing the activity of glucoamylase to be calculated through measurement.
