Panoramica
Soy isoflavones are flavonoids, a class of secondary metabolites formed during the growth of soybeans, and are biologically active substances. As they are extracted from plants and share a similar structure with estrogen, soy isoflavones are also known as phytoestrogens. The estrogenic effects of soy isoflavones influence hormone secretion, metabolic biological activity, protein synthesis, and growth factor activity, making them natural cancer chemopreventive agents.
In this experiment, 95% ethanol is used for extraction, with genistein serving as the standard. The absorbance is measured under UV light at 260 nm, and the content is calculated using the single-wavelength method.
