Poly - γ - glutamic acid (PGA), also known as natto gum or polyglutamic acid, was first discovered during the fermentation of natto. Natto is a traditional fermented soybean food commonly consumed by Japanese people. After fermentation, natto contains more abundant vitamins (B2, B6, B12, E, K2) and more easily digestible proteins than soybeans themselves. In addition, natto also contains various digestive enzymes, as well as special polysaccharides (Levan), thrombolytic enzymes (Nattokinase), and gamma polyglutamic acid (gamma PGA) that are helpful for physical health.
