Panoramica
Tannase, also known as tannin acylhydrolase (Tannase, EC 3.1.1.20), is found in tannin-rich plants as well as widely in microorganisms. It hydrolyzes ester bonds and depsidic bonds to produce gallic acid and glucose. This enzyme can be produced by molds such as Aspergillus niger and Aspergillus oryzae. It can be used to treat tannins and proteins in beer for clarification, to remove astringency from persimmons and other products, and to manufacture instant tea while preventing turbidity in fermented tea. This product is suitable for determining tannase content in biological samples. Its principle involves using propyl gallate (PG) as the substrate for the tannase enzymatic reaction. PG has a characteristic absorption peak at 270 nm. By measuring the change in absorbance at 270 nm before and after the reaction, the tannase enzyme activity is calculated.
