Trehalose is a non-reducing disaccharide widely present in animals, plants, microorganisms, and cultured cells. This sugar possesses the ability to protect biological macromolecules such as nucleic acids and proteins under stress conditions including desiccation, drought, low temperature, and high osmotic pressure, and is therefore extensively employed in the preservation of pharmaceuticals, health products, enzyme preparations, and food products. This kit utilizes the anthrone‑sulfuric acid method for the determination of trehalose content. The principle is as follows: under high-temperature conditions, sugars are dehydrated by concentrated sulfuric acid to generate furfural or hydroxymethylfurfural, which then condenses with anthrone to form a blue‑green furfural derivative. This product exhibits a maximum absorption peak at 620 nm, and the color intensity is directly proportional to the sugar content.
