Overview
This product is a non-specific lipase derived from Antarctic Candida A. CALA remains stable in a relatively wide range of pH values, especially acidic pH values, with strong heat resistance and a maximum temperature of 90 ° C. In esterification reactions with spatially hindered substrates, CALA is the only lipase capable of catalyzing the reaction. This enzyme can act on multi branched acyl groups and side chains that are hindered in ethanol space.
