Alcohol acyltransferase (AAT, EC 2.3.1.84) is a key enzyme in the biosynthesis pathway of ester compounds. Research indicates that its activity is positively correlated with the content of esters in fruits.
Alcohol acyltransferase (AAT) catalyzes the reaction between acetyl-CoA and alcohol compounds to generate ester compounds and CoA. The produced CoA possesses reducing properties and can react with DTNB to form a yellow substance. This colored compound has a characteristic absorption peak at 412 nm, allowing the determination of AAT enzyme activity. The reaction formula is: acetyl-CoA + a primary alcohol = CoA + an acetyl ester.
