Glutamate (Glu) is widely present in animals, plants, microorganisms, and cultured cells. It is not only one of the 20 amino acids that constitute proteins but also participates in the synthesis of various amino acids through transamination, serving as a primary source of amino groups in living organisms. Additionally, Glu is the main active component of monosodium glutamate, commonly used as a food additive and in flavor production.
Assay Principle: Samples are extracted using a specialized extraction buffer, followed by color development with a chromogenic agent. Absorbance is measured at 570 nm after color development.
