El éster metílico del ácido araquidónico es el ácido graso esencial clave en el origen de la cascada del ácido araquidónico. Es convertido por las enzimas ciclooxigenasa, lipoxigenasa y epoxigenasa en más de ciento cincuenta potentes metabolitos autacoides primarios diferentes en especies que van desde los hongos hasta las plantas y los mamíferos. El ácido araquidónico se almacena en los fosfolípidos tisulares en forma esterificada, donde constituye un porcentaje pequeño pero críticamente controlado del conjunto de ácidos grasos poliinsaturados. El contenido de ácido araquidónico se mide frecuentemente mediante la saponificación de la fracción lipídica seguida de la esterificación metílica y el análisis por cromatografía de gases de los compuestos FAME (éster metílico de ácidos grasos) resultantes.
