Oleuropein hydrolyzes to form hydroxytyrosol and tyrosol, with hydroxytyrosol considered the main component associated with olive′s health benefits. Olive oil phenols demonstrate antioxidant, anti-thrombotic, anti-inflammatory and anti-atherogenic characteristics.
