Sucrose is a primary product of photosynthesis and is widely distributed in plants, with particularly high levels found in sugar beet, sugarcane, and fruits. Sucrose is a disaccharide formed by the condensation of glucose and fructose. It is readily soluble in water and slightly soluble in ethanol. This kit employs the anthrone colorimetric method for sucrose determination. Under acidic conditions, sucrose is hydrolyzed to monosaccharides, and the resulting products react with anthrone to generate a colored compound with a characteristic absorption peak at 620 nm. Sucrose content can be quantitatively determined by measuring the absorbance.
