개요
Myrosinase catalyzes the hydrolysis of glucosinolates to produce glucose. The glucose is then sequentially catalyzed by hexokinase (HK) and glucose‑6‑phosphate dehydrogenase (G6PDH) to generate 6‑phosphogluconate, with concomitant reduction of NADP⁺ to NADPH. The NADPH, via electron transfer mediated by 1‑mPMS, reduces WST‑1 to formazan, a product that exhibits a characteristic absorption peak at 450 nm. The glucosinolate content can be quantitatively determined by monitoring the change in absorbance.
