Tannins are a class of polyphenolic compounds widely found in plants, also known as plant polyphenols. They generally possess an astringent taste, can precipitate proteins, alkaloids, and polysaccharides, and can complex or electrostatically interact with various metal ions. Based on their chemical structure, tannins can be classified into hydrolyzable tannins and condensed tannins. The ability of tannins to bind proteins is also referred to as astringency, which underlies various physiological activities such as hemostasis, microbial inhibition, anti-allergy, anti-mutation, anti-tumor, and anti-aging effects. It is also one of the factors influencing the taste of products. This product is suitable for determining the tannin content in liquid samples such as plant tissues, fruit juice, and honey. Its principle is that tannins react with phosphomolybdic acid in an alkaline environment to form a blue compound, which has a characteristic absorption peak at 760 nm. The tannin content in the sample can be obtained by measuring the absorbance value at 760 nm.
