Coconut oil is a non drying oil extracted from coconut kernels. At room temperature, it appears solid, white or light yellow, and can also be consumed with the unique aroma of coconut. Low unsaturated acid content, good stability, and not easily oxidized or deteriorated. Mainly composed of glycerides of lauric acid, myristic acid, and oleic acid. Can undergo saponification with concentrated caustic soda solution at room temperature.
