Pectin is a major component of the primary cell wall and the middle lamella of plant cells, primarily composed of protopectin, pectin methylester, and pectic acid. Pectin contains galacturonic acid, galactose, arabinose, glucuronic acid, etc., and is the most abundant polysaccharide component in the cell walls of many higher plants. Its unique physical and chemical properties influence the taste and quality of plant-derived foods. Pectin molecules are cross-linked through Ca²⁺ bridges, as well as other ionic bonds, hydrogen bonds, glycosidic bonds, ester bonds, and benzene ring coupling. Various forms of pectin can be extracted using different extraction methods, such as water-soluble pectin (WSP), ion-bound pectin (ISP), and covalently-bound pectin (CSP). This product provides a simple, convenient, and rapid method for determining ISP content, suitable for plant tissue samples. Its principle involves extracting ion-bound pectin (ISP) using an acidic solution containing a chelating agent, followed by the carbazole colorimetric method for pectin quantification. Pectin is hydrolyzed to galacturonic acid, which undergoes a condensation reaction with carbazole reagent in a sulfuric acid solution. The resulting compound has a maximum absorption peak at 530 nm.
