Übersicht
Sucrose invertase (Ivr) catalyzes the irreversible decomposition of sucrose into fructose and glucose and is one of the key enzymes in sucrose metabolism in higher plants. Based on optimal pH, Ivr in higher plants is divided into two types: acid invertase (AI) and neutral invertase (NI). NI is mainly present in the cytoplasm and is responsible for the breakdown of cytoplasmic sucrose into fructose and glucose.
Determination principle: NI catalyzes the decomposition of sucrose to produce reducing sugars, which further react with 3,5‑dinitrosalicylic acid to form a reddish‑brown amino compound with characteristic light absorption at 510 nm. Within a certain range, the absorbance at 510 nm is proportional to the amount of reducing sugars produced. NI activity is calculated by measuring the rate of increase in absorbance.
