Total ascorbic acid (TAA) includes both the reduced and dehydroascorbic acid forms. Reduced ascorbic acid is readily oxidized to dehydroascorbic acid, which reacts with 2,4‑dinitrophenylhydrazine (DNPH) to form a red osazone that is soluble in sulfuric acid. This product exhibits a maximum absorption peak at 520 nm, and the total ascorbic acid content can be calculated by measuring the absorbance.
