Overview

Anthocyanins are a class of natural pigments that are readily soluble in polar solvents and belong to the flavonoid compounds. They are widely distributed in the roots, stems, leaves, flowers, and fruits of plants, imparting a range of colors from red to purple, and are the primary pigments responsible for plant coloration. This kit employs the pH differential method for the determination of anthocyanin content. At pH 1.0, anthocyanins exhibit a maximum absorption peak at 530 nm; whereas at pH 4.5, they are converted to the colorless chalcone form and show no absorption at 530 nm. Utilizing this property, the absorbance values at 530 nm and 700 nm are measured under the two pH conditions, and the anthocyanin content in the sample can be quantitatively calculated. The pH differential method minimizes the effects of variations in solution pH and solvent composition, and effectively eliminates interference from other non‑anthocyanin substances in the detection results.
