Overview
Chitin is primarily found in the exoskeletons of crustaceans such as shrimp, crabs, and insects, in the organs of mollusks (e.g., squid cartilage), and in the cell walls of fungi. Chitinase (EC 3.2.1.14) catalyzes the hydrolysis of chitin and plays a role in defending against fungal infection, making it a research hotspot in the study of antifungal diseases.
The assay principle of this kit is as follows: Chitinase hydrolyzes chitin to produce N-acetylglucosamine, which further reacts with p-dimethylaminobenzaldehyde to form a red-colored compound. This product exhibits a characteristic absorption peak at 585 nm. By measuring the rate of increase in absorbance at 585 nm, the activity of chitinase can be determined.
