Overview
Chitinases are widely distributed among microorganisms, animals, and plants. Although higher plants do not contain chitin (a component of fungal cell walls), chitinase activity increases rapidly upon pathogen infection. Therefore, this enzyme is closely associated with plant disease resistance and is an important pathogenesis‑related protein. Chitinase primarily hydrolyzes the β‑1,4‑glycosidic bonds in chitin polymers. Under the action of snailase, the hydrolysis products are completely degraded to N‑acetylglucosamine monomers. The monomers subsequently react with potassium ferricyanide, and the reaction is detected at 420 nm. Chitinase activity is then calculated based on the absorbance measurement.
