Overview
Starch branching enzyme (SBE, EC 2.4.1.18) is mainly found in plants and is a key enzyme involved in amylopectin synthesis, catalyzing the conversion of amylose to amylopectin. Determination of SBE activity is of great significance for starch biosynthesis research, breeding of high-quality crop varieties, and genetic improvement of quality traits. This product can be used for the detection of SBE activity in plant tissues and bacterial samples. The principle is as follows: Amylose forms a complex with iodine, exhibiting a characteristic absorbance peak at 660 nm. SBE catalyzes the reduction of amylose, resulting in a decrease in absorbance at 660 nm of the starch-iodine complex. Within a certain period, the percentage decrease in absorbance reflects SBE activity.
