Overview

Sucrose (C₁₂H₂₂O₁₁, FW 342.3) is an important energy source and can be hydrolyzed to glucose and fructose. This kit employs a sucrase‑GOD coupled method for the specific determination of sucrose. Sucrase hydrolyzes sucrose to glucose, which is then catalyzed by GOD‑POD to react with a chromogenic reagent, producing a pink product with a maximum absorption peak at 520 nm. The sucrose content can be quantified after subtracting the background of free glucose. Disaccharides such as maltose and lactose do not interfere with this assay.
