Overview
Fructan hydrolase (Levanase, EC 3.2.1.65) hydrolyzes levan to ensure energy supply, rapidly increase osmotic pressure, and elevate oligofructose concentrations under stress conditions, thereby maintaining matrix stability and conferring cold resistance. This enzyme hydrolyzes the substrate levan to generate reducing sugars. The reducing sugar content is determined by the 3,5-dinitrosalicylic acid (DNS) method, and the absorbance is measured at 540 nm. The levanase activity can be calculated based on the change in absorbance.
