There are three sulfur-containing amino acids in proteins: methionine, cystine, and cysteine (Cys). Among them, Cys is the only sulfur-containing amino acid that contains a sulfhydryl (-SH) group. It is derived from methionine and can be interconverted with cystine. Cys participates in the formation of protein disulfide bonds, often constitutes part of the active site of proteins, and can provide sulfhydryl groups for other physiological and biochemical reactions. Furthermore, Cys accumulates abundantly on the surface of the skin and mucous membranes. It maintains the activity of crucial sulfhydryl enzymes involved in keratin production, replenishes sulfhydryl groups to support normal skin metabolism, and regulates the production of underlying melanin by pigment cells in the deepest layer of the epidermis. These functions contribute to its roles in skin whitening, detoxification, and improving inflammatory and allergic skin conditions. Assay Principle: Cys reduces phosphotungstic acid to produce tungsten blue, which exhibits an absorption peak at 600 nm. The Cys content is calculated based on the absorbance at 600 nm.
