Maltotetraose is a maltooligosaccharide.
Maltotetraose producing amylases are highly desirable for application in bread making and other food industries.It has been used in a study to characterize an exo-acting intracellular α-amylase from the hyperthermophilic bacterium Thermotoga neapolitana.
