Overview
Glutamate is widely present in animals, plants, microorganisms, and cultured cells. It is not only one of the 20 common amino acids that constitute proteins, but also a key molecule in cellular metabolism. In addition, glutamate serves as the most abundant fast excitatory neurotransmitter in the mammalian nervous system and is widely used in the food industry as a flavor enhancer.
The detection principle of this kit is as follows: Glutamate dehydrogenase (GLDH) specifically catalyzes the substrate glutamate, while reducing NAD⁺ to NADH. NADH exhibits a characteristic absorbance peak at 340 nm. By measuring the increase in absorbance at this wavelength, the glutamate content in the sample can be quantitatively calculated.
