Overview

Asparaginase (EC 3.5.1.1, ASNase) is an amidohydrolase that catalyzes the deamination of L-asparagine to produce L-aspartate and ammonia. This enzyme exhibits anti-tumor activity and is widely utilized in various fields such as the food and pharmaceutical industries. Asparaginase (ASNase) catalyzes the hydrolysis of asparagine to aspartic acid and ammonia. Under strong alkaline conditions, the ammonia reacts with hypochlorite and phenol to form a stable, water-soluble blue indophenol compound. This compound has a characteristic absorption peak at 630 nm, and the enzyme activity can be calculated by measuring the rate of increase in ammonia production.
