Overview
Under the action of a complex enzyme system containing galactose dehydrogenase, galactose is decomposed, simultaneously reducing NAD⁺ to NADH. NADH then reacts with a specific chromogenic agent to form a yellow substance with a characteristic absorption peak at 450 nm. The galactose content is calculated by measuring the increase of this substance.
