Overview
Chitin is mainly found in the exoskeletons of crustaceans such as shrimp, crabs, and insects, in the organs of mollusks (e.g., the cartilage of squid), as well as in the cell walls of fungi. Chitinase (EC 3.2.1.14) catalyzes the hydrolysis of chitin and plays a role in defending against fungal infection, making it a research focus in antifungal disease control.
Determination Principle: Chitinase hydrolyzes chitin to produce N-acetylglucosamine, which further reacts with p-dimethylaminobenzaldehyde to form a red compound with a characteristic absorption peak at 585 nm. The rate of increase in absorbance reflects chitinase activity.
