Overview

Phytase is a general term for a class of enzymes that catalyze the hydrolysis of phytic acid and its salts into inositol and phosphoric acid (or phosphates). Belonging to the family of phosphomonoesterases, it can convert phytic acid and its salts in food and feed into available phosphorus for organisms, reduce phosphorus content in feces, mitigate environmental pollution, and improve the absorption and utilization of nutrients. Therefore, it holds extensive research and application value. Determination Principle: Under specific temperature and pH conditions, phytase hydrolyzes the substrate sodium phytate to generate inorganic phosphorus and inositol derivatives. In an acidic environment, the inorganic phosphorus reacts with an ammonium molybdate chromogenic agent to form a blue complex, which exhibits a characteristic absorption peak at 700 nm. Phytase activity can be calculated based on the change in absorbance at 700 nm.
