Identification of cyanogenic glycosides

Summary

Cyanogenic glycosides are mainly glycosides with α-hydroxynitrile. This kind of glycoside is easy to be hydrolyzed by dilute acid and enzyme catalyzed hydrolysis under different conditions, and the generated glycoside α-hydroxynitrile is very unstable and immediately decomposed into aldehyde (ketone) and hydrocyanic acid; and under the action of concentrated acid, the -CN group in the glycoside is easy to oxidize into -COOH group, and NH4 is generated; and if under alkaline conditions, the glycoside is easy to be isomerized to generate α-hydroxy carboxylate.
