Vitamin C, also known as L-ascorbic acid, is an essential nutrient for higher primates and a few other organisms. Within living organisms, vitamin C acts as an antioxidant. It is an acidic hexose derivative—specifically an enol-form hexonic acid lactone—that helps protect the body from threats posed by free radicals and also functions as a coenzyme. It is widely available from various fresh fruits and vegetables. Vitamin C exists in two isomeric forms, L-type and D-type, with only the L-type possessing physiological activity. Both the reduced and oxidized forms are biologically active. The detection principle of this kit is based on the formation of copper iodide from a copper salt and an excess of an iodide salt. The resulting copper iodide is unstable and decomposes into cuprous iodide and free iodine. The released free iodine then oxidizes vitamin C to form hydrogen iodide. This reaction continues until all the vitamin C is completely oxidized. The remaining trace amount of iodine reacts with a starch indicator to produce a reddish-brown (or purplish-red or blue) color. This method offers a clear endpoint, is simple and rapid, and allows for accurate measurement of vitamin C content, with a general error margin of less than 2%. This product is intended for research use only and is not suitable for clinical diagnosis or other purposes.
