Summary

Flavonoid glycosides are polyphenolic substances that belong to the flavonoid group. Flavonoids (also known as flavonoids) refers to a series of compounds consisting of two phenolic hydroxyl benzene rings (A ring and B ring) connected to each other through the central three carbon atoms.O on the C heterocyclic ring has a shared pair of electrons and has a weak basicity, and can form salts with strong acids.The C3 position is easy to hydroxylate to form a nonphenolic hydroxyl group, forming a flavonoid alcohol. Flavonoids in tea leaves account for 2-5% of the dry weight of tea leaves.
